Tasmanian Whisky comes to US and Scotland

The T.W.A.S. reports that Lark Distillery are looking to expand their business into US and Scotland.

Today Lark Distillery offers a wide range of spirits that includes 3 whisky’s and also the possibility to buy by the Barrel.

Their flag ship Whisky is the Lark’s Single Malt Whisky

Jim Murray said in his bible 2004 - “Congratulations: Australia has entered the ranks of serious whisky distilling nations”

It is distilled from Tasmanian Barley, malted at the Cascade Brewery. The whisky is peated (approximately 50% of the malt is peated) and resembles in flavour a Scottish Highlands whisky. 

whisky2.jpgThe whisky is double distilled in our own 500 litre hand made copper pot still and it is only the “honey sweet” HEART of the run which we keep for barreling in 100 litre oak casks. 

It is matured for a period of at least four to five years in the smaller barrels which have a much larger surface area-to-volume of liquid giving a faster rate of evaporative losses and shorter maturation period than the larger barrels used in Scotland.

Colour: varies due to single cask bottling from pale straw to golden honey rich.
Nose: malty, lightly peated, peppery spices dig into the oily malt.
Taste: massively malty, clean and fruity with a powdery oak offering further 
complexity, oily & fat.
Finish: beautifully spiced and delicate with fluttering malty tones caressing the palate.
Balance: this is a lovely whisky, superbly made and offering both guile and charisma. 


The Lark Distillery has officially been in business since 1992. It was on a fishing trip to Tasmania’s highlands that Bill Lark first considered the idea of a Tasmanian single malt whisky first.

The Distillery has recently moved to Hobart’s waterfront, home of finishing yachts from the famous Sydney-Hobart Yacht Race. Hobart provides a great experience for visitors to the distillery which now incorporates Hobart’s first Specialized whisky bar, and a walk-through tour of the distilling process. The outlook to Mawson Place gives visitors the chance to sit outside, and enjoy their favorite dram overlooking Hobart’s vibrant port.

About the Lark Distillery’s Whisky
All single malt whiskies are made by the same basic process. However the flavor and character are determined by a variety of influences. The Lark distillery uses traditional production methods and carefully selected Tasmanian ingredients. With an excellent location, ingredients and years of distilling expertise, single malt whisky from the Lark Distillery has developed its own unique qualities.

Single Cask Whisky
The Lark distillery is much smaller than the large distilleries in Scotland. This enables us to practice one of the fine tunings which has long been lost to Scotland’s mass production distilling. The Lark Distillery does not mix whiskies between casks, each bottle’s contents has come from 1 single cask, ensuring the individual and pure character of every drop. Whilst there is some blending in all Scottish single malts, the whisky from the Lark Distillery involves absolutely no blending at all.
